Ingredients:
- Fresh Carrot (about 1/2 kg) (peeled and cut)
- 4 tablespoons olive oil
- 2 cloves garlic2 tablespoon lemon juice
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 2 tablespoon fresh cilantro
- 1/4 tablespoon hot paprika
Preparation:
Boil the carrots in salted water until tender. In a medium skillet, gently saute the garlice cloves in the olive oil for 2-3 minutes over low heat. Discard the garlic, add the carrots, lemon juice, spices and cilantro. Saute over low heat for another 2 minutes and remove from the heat.
